Polyglutamic Acid is a water-soluble, biodegradable biopolymer produced by microbial fermentation. It is a sticky substance and was first discovered in "Natto". PGA is an unusual anionic, naturally occurring homopolyamide composed of D and L glutamic acid units connected by an amide bond between the α amino group and the γ carboxylic acid group. Polyglutamic Acid is composed of

α-amino and γ-carboxyl cross-linked glutamic acid monomers. The molecular weight of PGA is usually between 100 and 1000 kDa. It is water-soluble and edible. It has a wide range of applications in food, cosmetics, water treatment and other fields.
